I am current looking for work and I need to update my resume where it will allow me to apply for several different positions and not just one in counseling, I would like to do other things, like creative arts or production etc.

Every resume that you send out should be customized to fit the job description. That's even true for similar jobs where minor tweaks are usually possible. 

Always emphasize your most relevant experience and education. With a chronological/functional combo or functional resume format, you'll even be able to elevate volunteer PARs and SARs to the same status as work experience. 

It's okay to leave off or deemphasize irrelevant experience. Employers only care about why you fit and don't need to wade through extraneous data.
